With our cold winter weather everyone needs a little warm and comforting dessert. That is why I will be showing you how to make these dark chocolate and coconut vegan cookies! They’re also super easy to make and taste amazing.

Ingredients (for 20 cookies)

1 ¼ cup of coconut flour

3 Tbsp. dark cocoa powder

1 Tbsp. of baking powder

¼ Tsp. of salt

½ cup of sugar
-
1 medium ripe banana
-
¼ cup of coconut milk
-
1/3 cup of coconut oil
-
Optional: coconut flakes to taste
Steps to follow:

Preheat your oven to 350 ° F / 180 °C

Mix the coconut flour with the cocoa powder, baking soda and salt in a small bowl. In another bowl you’re going to want to strongly whisk the sugar and coconut oil together. Mash the ripe banana with a fork in the sugar and oil mixture, and then add the coconut milk. Whisk well.
*I love the taste of coconut so I decided to add coconut flakes to make it even more flavourful and also adds a crunch to the cookies.

Now, mix all of the wet ingredients with the dry ingredients with your (clean) hands or a wooden spoon. You should get a dough that is easy to manipulate. You will then want to shape small balls of dough, and start placing them on a baking sheet, covered with a sheet of parchment paper. Or you could also lightly coat your pan with coconut or vegetable oil.

With your fingers or a small spoon, press gently on the cookies to flatten them just a bit. Once the oven has reached 350 degrees F, put the cookies in the oven for 10-15 mins. Leave them cool for a few minutes then you can sprinkle with powdered sugar to put a bit of colour on your masterpiece! Now they’re ready to be devoured!
